So, legend has it that the Chimichanga was  discovered in Tucson in the 1950’s when a burrito accidentally fell in the deep fryer! Now Arizona can officially say, we don’t make mistakes just happy little accidents!

INGREDIENTS:

2-Cups Shredded Chicken, cooked

1-Cup Cactus Salsa

1 Tsp Mexican Spice Blend

      1-Cup Shredded Cheese

2-Green Onions, chopped

          6 (8inch) Tortillas

2 Tbsp Butter, melted

Garnishes:

Diced tomatoes, sour cream, guacamole and additional cheese if you’d like

DIRECTIONS:

1.) Preheat oven to 400°. (Or if you prefer to deep fry them over baking them, begin to heat your oil.)

2.) Mix chicken, salsa, spice blend, cheese, and onions. Place 1/3 cup on each tortilla.

3.) Fold opposite sides over filling and roll up from the bottom. (If you chose the frying option, then submerge the chimichanga until golden brown.)

4.)Place seam-side down and brush top with melted butter

5.) Bake for 25 mins, or until crispy!
