In the “Heart of America”, Kansas City is Loyal to their Royal and believe you should Go Big or Go Mahomes! Nothing goes better on game day than some smoked KC style ribs! So bust out those Big Chief Smokers and have some fun while we #GoBigChiefsorGoMahomes!

 

INGREDIENTS:

1 Rack of Pork Ribs (Baby backs or Spare)

6-8 cups smoking wood (oak or hickory)

Daniels KC Style BBQ Sauce

KC Style Meat Rub

Smoker and choice of wood

Sides for your Ribs

 

DIRECTIONS:

1.) Choose whether your going to smoke Baby Backs or Spare ribs, and gather your smoking woods. We prefer Oak or Hickory, but apple may add a little sweetness which is good.

2.) Remove the membrane from the back of the rack, and trim the ribs of excess fat. Rub the rack with the dry rub provided. Wrap ribs in foil or place in a large container and store in the refrigerator over night (optional).

3.) Remove the ribs from the fridge if you premade them, while you’re starting the smoker. Fire it up to 225°F, adding chunks of smoking wood chunks when at temperature. When the wood is ignited and producing smoke, place the ribs in the smoker or grill, meat side up, and smoke until the ribs have a slight bend when lifted from one end, about 4-5 hours for baby backs or 5-6 hours for spare ribs.

*The accepted finished temperature of pork is 145°F, however, this has not given the collagen inside your ribs time to become gelatin for that perfect bite. That begins to happen when temperatures inside the meat reach 165°F. Continue cooking ribs until they reach around 195°F to 203°F for maximum render.*

4.) In the last hour of cooking, baste the top of each rack with barbecue sauce and continue smoking. Sauce to your flavor!

5.) Let rest for 15 mins, slice and enjoy!
