Boston is a city with deep Irish roots, so it is no surprise that St. Patrick’s Day brings quite a celebration! So, indulge in the flavors of the Irish, find the gold at the end of rainbow, and take it easy on the Jameson and bad decisions!
INGREDIENTS:
1-Large bag Tortilla chips
1/2 lb. Corned Beef
1 ½ cups shredded Swiss Cheese
½ cup Sauerkraut
DRESSING:
2 Tbsp Sweet Pickle Juice
2 Tbsp Sweet pickle Relish
2 teaspoon Horseradish Cream
2 tsp Lemon Juice
DIRECTIONS:
1.) Preheat oven to 350°. Chop the sweet pickles and onions provided to make the relish for the dressing.
2.) Scatter half the chips evenly on a large baking sheet. Top with half the sauerkraut, cheese, and corned beef. Add a second layer of the chips and top with remaining sauerkraut, cheese and horseradish.
3.) Bake 10-15 mins or until the cheese is golden brown.
4.) Finish making the dressing and top nachos with it when ready to eat.
